Rochester Restaurants Struggle Amid National Egg Shortage

Written by on February 20, 2025

Local restaurants in Rochester, NY, are feeling the strain of the nationwide egg shortage, which has driven egg prices up significantly over the past several months. With inflation and supply chain challenges already affecting the industry, business owners are forced to make difficult decisions to keep serving customers.

Rene Spallina, owner of Pane Vino on the Avenue in Pittsford and The Frog Pond on Park in Rochester, says her restaurants are now paying up to $250 per case of eggs, a steep increase from $78 in July.

“This is a big deal. The restaurant business runs on small margins, and when ingredient prices skyrocket, we have to make adjustments,” Spallina said. The Frog Pond, known for its breakfast menu, has already implemented slight price increases to keep up with rising costs.

Beyond eggs, transportation costs and supplier price hikes continue to impact the industry. Despite these challenges, Spallina remains committed to maintaining the quality of her food, even as businesses across the country struggle to stay afloat.

With no clear end to the shortage in sight, local restaurants must continue to adapt to keep serving their customers.
